Ilove making use of the whole vegetable. Pestos are a great way of using greens from carrots, radishes, just about anything. I mean, if I’m honest, I don’t really love kale, but a kale pesto is actually pretty decent.
Maybe it’s the whole accompanied-by-pasta thing…
Ingredients:
- 2 c carrot tops
- 1/2 c raw almonds
- 1/4 c olive oil
- 1 garlic clove
- salt and pepper
Directions:
Chuck it all in a food processor, blitz and adjust flavors as you like.
I put this on whole wheat pasta, but you could use it as a dip or spread too.
